James lived and attended school on Canvey Island and then trained at Lloyds of London and Butlers Wharf Chef School where he completed his City and Guilds. He began his career at High Table (for RaboBank) when he was nineteen and from there he moved to many different kitchen establishments which included an a la carte restaurant at Kent Cricket Club and at the Henley Regatta for Albert Roux.
Since 2001, James has had a wide and varied career working in prestigious venues, such as the Elgar Restaurant at the Royal Albert Hall and for several celebrities including David and Victoria Beckham.
In May 2007, James was asked to become the Head Chef of the Monico Dining Rooms. This was an opportunity he gladly accepted. He said “It is especially pleasing to return to my roots and pass on my experience after 12 years working in London. The success of the Monico Dining Rooms will depend on my offering customers an eating experience they will return to again and again.”
